Pan Seared Venison

Serves: 4

  • 1 (2- to 2 1/4-lb) venison strip loin
  • 1 tablespoon olive oil
  • Sea salt and pepper
  1. Preheat oven to 350 degrees.
  2. Rub venison with oil and sprinkle with 1 teaspoon salt.
  3. Heat sauté pan until hot, then lightly oil and sear venison, turning once, 4 minutes total. Transfer pan with venison to oven and roast 4 minutes for rare meat (120 degrees). Turn oven off and let venison stand in oven 5 minutes for medium-rare. Remove from oven and let stand 10 minutes (temperature will rise to 125ºF).
  4. Serve with Creamy Mashed Cauliflower [PAGE] or Oven Roasted Delicata Squash Slices [PAGE] and vegetables.
