Fresh Herb Vinaigrette

This recipe is a delicious base recipe to explore and play with. Store-bought salad dressings are often filled with fillers and preservatives taking away from the rich flavor of real foods. The use of medium chain triglyceride oil boosts the metabolic advantage to your salads and vegetables. The taste of the oil is mild so you gain an extra flavor-burst from using high quality vinegars and fresh herbs to any meal.

Yield: 2 cups

  • 1 ½ cups medium chain triglyceride oil
  • 1/3 cup balsamic, apple cider, or white wine vinegar
  • ¼ cup fresh herbs: basil, cilantro, dill, thyme, parsley – you can add any combination that you prefer

Optional Additions: a few splashes of truffle oil, ¼ cup fresh blueberries, raspberries or blackberries, fresh garlic & lemon juice

  1. Blend all ingredients using a blender or food process. For a thicker dressing, use less liquid and add additional fresh herbs.
  2. For a Honey-Mustard Dressing add the following ingredients to your blender following the ratios above (recommended to use white wine or apple cider vinegar for this recipe):
  • 1 tablespoon raw honey
  • 2-3 cloves fresh garlic
  • 1 tablespoon Dijon or whole grain mustard
  • 1 tablespoon poppy seeds
  1. For a Sesame-Ginger Dressing add the following ingredients to your blender following the ratios above (recommended to use white wine or apple cider vinegar for this recipe):
  • 1 teaspoon raw honey
  • 1 tablespoon fresh ginger
  • 1 teaspoon sesame seed oil
  • 1 tablespoon tamari
  • 1 teaspoon sesame seeds
