Cherry Tomato Salad

Serves: 4

  • 5 cups cherry tomato tomatoes, rinsed and quartered
  • 1 ½ cups deseeded kalamanta olives
  • 1 teaspoon freshly ground black pepper
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 bunch of fresh basil, rinsed and leaves destemmed
  1. In a large serving bowl, mix the tomatoes, olives and black pepper. Drizzle with olive oil and red wine vinegar. Mix in the basil and serve.
