Cherry Tomato Salad
Serves: 4
- 5 cups cherry tomato tomatoes, rinsed and quartered
- 1 ½ cups deseeded kalamanta olives
- 1 teaspoon freshly ground black pepper
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 bunch of fresh basil, rinsed and leaves destemmed
- In a large serving bowl, mix the tomatoes, olives and black pepper. Drizzle with olive oil and red wine vinegar. Mix in the basil and serve.
